Potato Bake Recipe
Delicious Fish Potato Pepper Onion Bake by Frank Ernhart
The recipe for this dish was inspired by a Greek fish and potato bake recipe. The addition of peppers and onions to the recipe gives added flavors tnat improve the taste. This recipe uses olive oil as the cooking fat which makes it healthier than the use of butter would. It is very easy to make and actually takes about 30 minutes once you first put it in the oven.. Once you do the preparation on the peppers, potatoes and onion, you can relax while this one dish meal bakes It takes about 45 minutes including preparation time. The roasted peppers and onions give this dish an incredible taste. This recipe is also healthy in that it uses low fat fish and olive oil in the place of butter. The fish used here is whiting but I have used flounder and sole for this dish.
Ingredients
2 fish fillets (whiting or similar)
the zest of one orange
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon black pepper
5 tablespoons olive oil
1 bell pepper, seeded and cut into 1/2″ wide strips
1 large potato, peeled and sliced thin
1 large yellow onion, peeled and sliced thin
Instructions
1 – Preheat the oven to 425 degrees Fahrenheit.
2 – Add 3 tablespoons of olive oil to grease a 9X13 baking dish.
3 – Add potato, onion and bell pepper and mix well to coat with oil.
4 – Mix oregano, orange zest salt, and pepper.
5 – Sprinkle 1/2 of the mixture on the vegetables.
6 – Bake for 25 minutes, stirring the vegetables halfway through the time
7 – Remove and lay the fish skin side down on top of the vegetables.
8 – Sprinkle with the other half of the spice mixture and the other 2 tablespoons of olive oil.
9 – Bake for another 7 minutes or until the fish flakes easily.
This dish could be accompanied by a tossed salad on the side, but it can stand alone as a healthy dinner for two.
